Shopska salad

Ingredients: 100 g sheep’s milk cheese, 400g tomatoes, 250g cucumber, 1 green pepper, 1 red onion, 3- 4 tbsp olive oil, 1/2 tsp salt, 1 tbsp vinegar or lemon juice.

How to prepare: Cut tomatoes, cucumbers, pepper and onion into rings. Salt and taste with lemon juice and olive oil. Cut cheese in small cubes and arrange over salad.

Eggplant with Cheese

Ingredients: 1/2 tea-cup cheese, 3 eggplant, 4-5 tbsp oil, 4-5 cloves of garlic, 2 tbsp vinegar, parsley, tomato for decoration.

How to prepare: Bake the eggplant, peel and mash. Grind cheese with a fork and add to mash. Stir constantly and add oil, vinegar and mined garlic. Decorate salad the fine-cut parsley and tomato rings just before serving.

Yoghourt Salad from Teteven

Ingredients: 500 g yoghourt, 2 pickled cucumbers, 25 g nuts, 10 ml vegetable oil, 1 egg, parsley, salt.

How to prepare: Drain yoghourt in cheese-cloth for several hours. Beat up yoghourt with wooden spoon and add oil and salt. Add fine-cut pickled cucumbers and minced nuts. Pour mixture in a vessel and cover with hard-boiled eggs cut into small pieces. Sprinkle with fine-cut parsley.
